Chile Relleno Casserole













I made the best casserole last night! It was super easy and I can't wait to make it again! We (Keith) almost ate the whole thing last night. I cut the recipe in half because I was only making it for 2 people. Keith ate his with a tortilla.


(This isn't my casserole, but it looked like that)

Here is the recipe:

1 lb. ground beef
1/2 c. chopped onion
1/4 tsp. pepper
2 (4 oz.) cans green chilies, cut in half and seeded
1 1/2 c. shredded Cheddar cheese, sharp
1 1/2 c. milk
1/4 tsp. bottled hot pepper sauce (optional)
1/4 c. all-purpose flour
1/2 tsp. salt
4 eggs, beaten

Brown beef and onion in pan; drain off fat. Sprinkle meat with salt and pepper. Place half the chilies in a 10 x 6 1/2 inch baking dish; sprinkle with cheese and top with meat mixture. Arrange remaining chilies over meat. Mix flour and salt in bowl. Combine eggs, milk and hot sauce; add egg mixture to flour gradually, beating until smooth. Pour mixture over meat/chili mixture already in the pan. Bake in preheated 350 degree oven for 45-50 minutes or until knife inserted just off center comes out clean. Let cool 5 to 10 minutes. Serves 6.

Bravo!


So, two posts in one day. Is this a record?

I just came to realize something you may have already known. I am a Bravo TV whore. I don't think there is one show on there that I don't watch.

It's sad. Disgusting. Gotta get your drama somewhere!

You never know...

As I was driving to work this morning I was getting pissed at the big ass car in front of me going 20 below the speed limit. Don't they know I gotta get to work?! Then a remembered a really great life lesson I learned a few months ago. You never know.

You never know what that person is going through... Maybe someone close to them just got diagnosed with cancer. Maybe it was them. Maybe they are having an awful day. Maybe they are taking their time because they don't want to get to where they are going.

This is so important for me to remember because I am always in a rush, trying to be early, get it done quicker, first. Slow down. Take a deep breath. You never know!

Mani Pedi

I gave myself the worst manicure ever last night. Usually I take my time and do it right, but last night I got in a hurry and I skipped steps and went too fast. So I am going to tell you how to do it right (not like me).

Here is my usual routine:

Base coat of Stickey by Creative.

Let that dry a little... then go to the polish. I am a polish whore! I even have some duplicates of colors. For last night's horrible manicure I chose "You don't know Jaques" which might be the most perfect color of all. See?








For polish you have to do two coats. One thin layer that covers the bases. Then another layer that perfects.

Lastly, you have to use a good top coat. I love Super Shiney by Creative.


I usually do my nails before bed and then try to fall asleep not touching anything. Sometimes this works well, sometimes I wake up with chunky nails. Depends on how tired I am...

Aaron Brothers!

After a well deserved nap I went to Aaron Brothers framing last night and got 6 frames. They are having their big buy-one-get-one-for-a-penny sale. We aren't talking 4x6 frames. It was more like 18x24, a one sheet frame, 20x24.... it was awesome. Everything is framed...now to hang it. I will post pics soon.

Sleep Study

It should be called the "No sleep study" cause that is what you get. None. After a day of no caffiene and no naps I show up early (8pm) ready to go to sleep. The tech lets me in, and continues to do her work, kind of annoyed that I am early. So I read. She finally takes me back and starts the crazies. She is nuts. But the nice kind of nuts that makes me feel bad for calling her nuts, but if she knew I was calling her nuts she would agree with me. She was super nice, but crazy.

I am ready to get the show on the road! She says we have 3 hours (!) of stuff before I get to sleep.

Fast forward to 12:30 when she starts putting 30 wires all over me, including 6 on my scalp. The A/C is set on 67 so I request extra blankets. Listen lady, 67 is TOO COLD!

I fell asleep quickly, then around 5am I was wide awake. Ready to go home! She makes me sleep a little longer, then at 6:15 she comes in to begin removing all the wires. She gives me a hug and lets me leave. The whole way home I am praying that I don't see any neighbors or anyone I know (our gym is at the end of our street). I am just beginning to thank my lucky stars when I see a 20-something male walking to the gym. I am officially crazy too.
